Wenzhou Fish Ball

Wenzhou Fish Ball is made of the fresh meat of brown croakers (Actually they are not spherical but in irregular shapes). First, cut the croaker meat into narrow strips, soak them in a mixture of wine, MSG and salt for about 20 minutes. Secondly, add a small amount of starch to the strips and hold them tightly between fingers for multiple times till they stick to each other. Thirdly, pinch off small pieces of the mixture one by one into the boiling water until they float. Fourthly, serve the fish balls in a small bowl,along with part of the boiling water as soup, and add rice vinegar, MSG, pepper powder and chopped green onion. The fish ball shops are distributed here and there in Wenzhou city proper. In Dec. 1998, Wenzhou Restaurant’s fish ball with unique and good taste, and Xianqian Tangyuan Shop’s sesame filling Tangyuan were identified as “China’s Famous Local Snacks” in an event held in Hangzhou by the former Ministry of Domestic Trade.
